Monosodium glutamate, also known as sodium glutamate and MSG, is a sodium salt of the naturally occurring non-essential amino acid glutamic acid. It is used as a food additive and is commonly marketed as a flavour enhancer.

Like the sodium salts of other amino acids, MSG is a stable colourless solid that is degraded by strong oxidizing agents.

MSG is used extensively in cooking. its use is not confined to Asian cuisine. MS is a very popular seasoning in North America. Throughout the food industry, MSG is becoming an increasingly popular way to add flavor to packaged foods such as soups, sauces, seasonings, and instant snacks.
